Kii Coffee Factory has been operating in Kirinyaga County since 1968, providing its members—farmers of the surrounding villages—coffee seeds and educational resources for best practices from Kenya's Coffee Research Institute, in addition to a mill for processing harvests. 

At the factory, freshwater is pumped into tanks from the nearby Kii River for the washing process; every batch of coffee is pulped, stored overnight, washed, soaked, and spread on drying tables for turning, sorting, and storage. 

This is the stage the peaberry beans are sorted from the standard coffee: sorters look for a perfectly spherical coffee bean, characterized by the rounded appearance of a pea rather than a regular coffee bean with a single flat side. A peaberry, with more of its seed's surface area in contact with the fruity coffee cherry, is thought to contain more brightness and acidity, as well as a unique roasting profile, when compared to its half-round sibling.
